Recipe: Pumpkin Spice Cookies
Yield: about 3 dozen or more medium-small cookies
What You'll Need:
= 2 1/2 cups flour
= 1/2 teaspoon baking soda
= 1/4 teaspoon salt
= 2 teaspoon pumpkin pie spice*
= 1 cup dark brown sugar, packed
= 1/2 cup white sugar
= 3/4 cup salted butter, softened
= 1 large egg
= 1 cup pumpkin [canned or freshly cooked]
= 1 teaspoon pure vanilla extract
= 1 cup raisins [optional]
= 1/2 cup walnuts, chopped [optional]
*Instead of going out and buying pumpkin pie spice, make your own! All you need is:
= 1 teaspoon ground cinnamon
= 1/2 teaspoon ground ginger
= 1/4 teaspoon ground cloves
Bring that together in a small bowl and there ya go. :D
Other Things You'll Need:
= 1 large mixing bowl
= 1 medium bowl
= Dry measuring cups
= Wet measuring cups
= Measuring spoons
= Rubber or silicone spatula
= Wire whisk
= Cookie sheet [minimum 1, more convenient if you have more]
How To Do It:
1. Preheat oven to 300°F.
2. In a medium bowl combine flour, baking soda, salt and pumpkin pie spice. Mix well with a wire whisk and set aside.
3. In a large bowl mix two sugars together. Add the butter [If you leave it out on the counter for a bit, it'll be soft enough so you don't need to heat it up. Don't use it fresh out of the fridge, it'll be way too hard.] and beat to form a grainy paste.
4. Add egg [It's better if you beat the egg in a small bowl before adding into the mixture.], pumpkin and vanilla. Mix until light and fluffy.
5. Add the flour mixture [and also the raisins and walnuts if you want]. Mix until combined. Do not overmix.
6. Drop by rounded tablespoons onto ungreased cookie sheets, 1 1/2 inches apart.
7. Bake 22-24 minutes until cookies are slightly brown along edges. Immediately transfer cookies with a spatula to a cool surface.
